To yaaaaaaaaable!

Ingredients (for 6 people): 
  • 18 large scallops
  • 3 – 4 passion fruit
  • olive oil (or sesame oil)
  • 2 lime juice
  • crushed pink berries
  • flower of salt

Prepare a marinade with olive oil (or sesame), lime juice and the pulp of 3 passion fruits. Taste to season with fleur de sel and crushed pink peppercorns.

If you don't like the textured marinade, pass it through a sieve using the back of a spoon.

To slice thinly vertically in the thickness of your nuts and present them flat next to each other.

Pour out the marinade on it, decorate with a few pink peppercorns and passion fruit pulp.

Cover with stretch wrap and cool at least 1 hour.

The success of the carpaccio also depends on the quality of the products used! Prefer scallops caught in Brittany!

Tips: 

Put your walnuts in the freezer for 20 minutes, you will be able to slice them thinly (be careful, the product must not have already been frozen).
